Requirements for the safety and quality of dairy ingredients stem from many sources, from legally-binding regulations such as the cGMPs and the other requirements of FSMA, to elective third-party standards recognized under the Global Food Safety Initiative (GFSI) that set an even higher bar. In this session we will review strengths, weaknesses and opportunities for facility environmental monitoring programs; dairy implications for FDA's final rule on traceability; and combining requirements for supplier compliance with regulations, quality management, and food safety, from the perspective of the user of dairy ingredients.
